Prickly pear, red variety
ORGANOLEPTIC ASSESSMENT
GENERAL ASPECT
Fruit with an ovoid, globose, cylindrical and umbilical shape at the upper end.
The peel is covered with small glochids (thorns) of cellulose.
On average, its length varies between 5-8cm, its width 4-7cm and its weight between 90 and 150g.
COLOUR
Peel: in the early stages of development it is green in color. Its color changes to yellow, orange, red, purple, purplish yellow depending on the state of maturity of the plant / Pulp: red.
TEXTURE
Peel: Thick / Pulp: gelatinous, fleshy, succulent, very aromatic, and with small edible seeds inside.
FLAVOUR
Sweet
BRIX
It varies between 13ºBx and 17ºBx depending on the state of ripeness and metabolism of the fruit.
RECOMMENDED USE
Table fruit, juice, nectar or pulp, dehydrated, fermented products (liqueurs, vinegars), jams, jellies, syrups, sweeteners, food colouring, cosmetics.

VALIDITY
10-12 days in the refrigerator / 1 month in a cold room (controlled temperature between 7ºC and 9ºC) / 2 months in a cold room with injected ozone.
